Strolghino is a deli meat product obtained by lean trimmings of culatello from pigs raised in Italian farms. The meat is ground stuffed into a thin casing. Given its small size and the lean meat, strolghino only requires a short maturation time before its softness can be enjoyed at its best.
It name derives from “strolga”, which in Parma flatlands area means soothsayer. According to tradition, the strolghino, hung next to the other meats being aged, would help to predict the maturation time of larger cured meats. It small size makes it easy and quick to consume. It features a soft texture and intense fragrance.
