PANCETTA LEAN COPPATA

The Lean Pancetta Coppata is so called because it is obtained by rolling a coppa inside a derinded and degreased pancetta. The product is then covered with white paper, tied up and left to age for at least 45 days. It is characterized by it decisive and fragrant taste.

PANCETTA NATURAL STECCATA

The name Pancetta Natural denotes a traditional pancetta with rind and elongated shape that is pressed between two wooden slats. Only pork meat from Italian pig farms is used to make it. Aged for at least 120 days, it features a delicate flavour and it red colour in the lean part and white in the fat one, with a soft and mild taste.
