The designation of Italian Ham indicates a type of ham produced in italy. It is a cured meat obtained by processing fresh pork legs from Italian pig farms. As they are not subject to PDO specifications, they are selected in wheights suitable for a maturation period of at least 12 months.
The fresh leg is trimmed to obtain the typical V-cut, which helps the meat to dry further in depth and yields a more intense taste.
