Since the beginning of the twenty-first century, Gualerzi decided has complied with the EU’s Eco-Management and Audit Scheme (EMAS), a voluntary certification for organizations seeking to evaluate and improve their environmental performance.
The scheme aims to achieve a sustainable economic development, with a focus on companies’ roles and responsibilities.
Within this framework, Gualerzi has made significant investments in energy efficiency, the use of renewable sources, emissions reduction and sustainable packaging.
The company has obtained multiple environmental certifications to assess and measure the results of these newly implemented solutions.
The new production plants are designed according to the principles of eco-friendly architecture.
Provides 60% of the electric power required for manufacturing, water heating, and refrigeration.
Takes advantage of natural outdoor environmental conditions to dry the cured meat.
Constantly monitor the power consumption of the plants.
The new production plants are extremely energy efficient.

The company obtained the Autorizzazione Unica Ambientale (AUA), a specific authorization ensuring control of atmospheric emissions through annual periodic audits of combustion efficiency.
Our waste is managed and disposed of in compliance with Italian regulations and the ISO 14001:2015 standard to which we adhere.
All our intervention plans aim to reduce noise pollution below legal limits (e.g., sound-proof cabins and anti-noise rooms).
This certifies our compliance with EU Regulation No 1221/2009, which is intended to help organizations to manage their environmental performance. It not only focuses on the limits imposed by the laws, but also fosters the active participation of employees and transparency of the organization towards public institutions and its community.
This certification allows companies to define their environmental policies and responsibilities through a detailed analysis of various environmental aspects (e.g., emissions, use of resources) and the significance of their impacts.
This certification supports organizations in the constant improvement of their energy performance, including energy efficiency, use and consumption.
This certification guarantees that our supply chain fully complies with organic farming requirements at each production stage.
This certification assesses the environmental impact, in terms of global warming, of a product over its entire lifecycle.
We are currently working on obtaining the certification for several Gualerzi products.
Gualerzi adheres to the Manifesto of the Italian deli meats Promotion Institute (IVSI),
which promotes values including a deep bond with local communities, a future-oriented vision and also product quality and sustainability.
Compliance is assured by a third-party auditor.
30% of our sliced products are packaged in recyclable paper trays (see picture on the right).
In 2020, we began adding recycled plastics (RPET)
to our trays. We have constantly increased the RPET content up to reaching the current proportion of 50% RPET per tray.
A share of the boxes we transport our products in is made of
100% recycled fiber.
The company’s goal is to further increase this amount.
When a product has the Forest Stewardship Council (FSC®) certification, it was surely made using paper or wood issued from responsibly managed forests. FSC® ensures the whole supply chain is managed ethically and sustainably: ecosystems are protected, not destroyed. Thanks to FSC®, forests never stop growing!
