Produced in Zibello, The Culatta – Heart of Ham is obtained from processing the finest part of the pig leg, after the fiocco and the gambetto have been removed. This heart of ham partly covered by its rind is salted by hand, and the outer lean part is covered with grease to keep it soft over time.
After a long maturation stage of at least 12 months, its delicate fragrance and mild taste make it a favourite deli meat.
